If you are headed out for a camping trip, you need to be prepared with some good camping meals. Camping and particularly overlanding are very much about the food you eat. To pull off a successful trip, you need to keep the camper’s bellies happy.
That being said, cooking at a campsite is not as easy as cooking at home, so you need to try and keep it simple. To that end, here are some simple breakfast, lunch and dinner ideas.
Good Breakfast Meals
Some say breakfast is the most important meal of the day. While that might not be necessarily true, it certainly sets the tone for the rest of the day. Here are some simple breakfast meals that will keep the family happy.
Breakfast Tacos
Simple to cook and extremely easy to eat. That makes it a perfect way to start the day.
Ingredients
- Tortillas.
- Eggs.
- Shredded cheese.
- Bacon or sausage.
- Hot sauce.
Directions
- Scramble eggs, cover and set aside.
- Cook bacon or sausage.
- Place a tortilla on a plate and add eggs, meat, cheese and hot sauce if desired.
Sausage & Egg Muffins
Just like the fast food favorite but fresher and with better scenery.
Ingredients
- English muffins.
- Eggs.
- Sausage patties.
Directions
- Cook sausage patties in skillet, cover and set aside.
- Cook eggs, sunny side, cover and set aside.
- Toast English muffins and top with a sausage patty and egg.
Omelettes
Never tried making an omellete? It is not nearly as hard as you might think, even at a campsite.
Ingredients
- Butter.
- Eggs.
- Desired filling (vegetables, cooked bacon crumbles, etc)
Directions
- Melt butter in a pan over a fire, grill or camp stove.
- Whisk your eggs and add them to heated pan.
- When eggs are almost done, add ingredients and fol omelette in half.
- Continue to cook until eggs are fully cooked and filling is heated.
Bacon & Eggs
A breakfast classic. Serve with some pre-made rolls and jelly and have a great way to start the day.
Ingredients
- Eggs.
- Bacon or sausage.
- Rolls.
- Jelly.
Directions
- Fry your bacon or sausage, cover and set aside.
- Prepare your eggs as desired. Scrambled or sunny side.
- Plate eggs, meat and serve with jelly ad rolls.
Dutch Oven Cinnamon Rolls
Who says that you can not have fresh cinnamon rolls on a camping trip. Not us.
Ingredients
- Packaged cinnamon rolls.
- Dutch oven.
Directions
- Place cinnamon roll in lightly greased dutch oven.
- Heat over a fire or grill until golden brown.
- Top with frosting and serve.
Coffee & Donuts
You are tired, maybe a bit cranky and perhaps it is raining at camp, what can you serve? Time to go back to basics with coffee and donuts.
Ingredients
- Coffee pot.
- Coffee.
- Assorted donuts.
Directions
- Heat coffee pot over fire or grill.
- Open box of donuts.
- Boom.
Good Lunch & Dinner Meals
Lunch and dinner are really about the same thing on a camping trip, so you can use these good camping meals interchangeably. The meals below, while slightly more complicated than breakfasts, are still very simple.
Tacos
Food that you can hold, without a plate, is always a good idea while camping or overlanding.
Ingredients
- Tortillas.
- Hamburger beef or chicken.
- Taco seasoning.
- Shredded cheese.
- Beans.
- Salsa or hot sauce.
Directions
- Cook meat until done.
- Add taco seasoning, cover and set aside.
- Heat beans.
- Top a tortilla with beans, meat, cheese and salsa or hot sauce.
English Muffin Pizzas
Sure to please even the pickiest of kids, an English muffin pizza is simple to prep and easy to cook with basic camping supplies.
Ingredients
- Cooking pan or dutch oven.
- English muffins.
- Pizza sauce.
- Shredded mozzarella cheese.
- Toppings (optional).
Directions
- Spread pizza sauce on half an English muffin.
- Top with mozzarella cheese and a few toppings(optional).
- Place in a pan or dutch oven and cover.
- Heat on a stove or over a fire until cheese is melted and toppings are cooked.
Nachos
It seems like a bit of a mess, but if you keep things relatively simple, you can pull this off and have some very happy campers.
Ingredients
- Tortilla chips.
- Refried beans.
- Hamburger meat.
- Taco seasoning.
- Shredded cheese.
- Miscellaneous toppings.
Directions
- Cook the hamburger meat until well done and add taco seasoning.
- Heat the refried beans and set aside.
- Place a layer of chips in a skillet and top with meat, beans and cheese.
- Cover and heat for 10 minutes over a fire, grill or burner.
- Add toppings as desired and serve.
Cheeseburgers
A classic camping meal that you must make at least once. Easy to make and always a crowd pleaser.
Ingredients
- Buns.
- Ground beef. (85/15 preferred)
- Salt and pepper.
- Sliced American cheese.
- Desired condiments.
Directions
- Form the meat into patties and season with salt and pepper.
- Grill the patties or fry them in a skillet until they are cooked to medium (thin pink line).
- Add cheese and serve when melted.
Foiled Mahi Mahi
Mahi Mahi is a forgiving fish and this meal is a surprisingly easy way to serve it.
Ingredients
- Mahi Mahi filets.
- Olive oil.
- Salt and pepper.
- Foil.
Directions
- Place the fish on foil and baste with olive oil.
- Season with salt and pepper.
- Wrap foil around fish and place on grill or over a campfire.
- Cook until fish is cooked through and flaky, roughly 10 minutes.
Spaghetti
It seems like this would be a messy meal, but if you keep things simple, it is easy to pull off.
Ingredients
- Spaghetti noodles.
- Pasta sauce.
- Parmesan cheese.
Directions
- Boil spaghetti until cooked to taste.
- Drain spaghetti and add sauce directly to pot.
- Plate spaghetti and top with cheese, if desired.
Macaroni & Cheese
Made from scratch macaroni and cheese is quite the treat, but we will save that for home. Luckily, the box is just as tasty and makes for one of the simplest good camping meals that you can serve.
Ingredients
- Boxed mac and cheese (the sauce packet style).
Directions
- Boil macaroni until done to liking.
- Add cheese packet and stir.
Hot Dogs
This one should really go without saying, but here it is, serve hot dogs.
Ingredients
- Hot dog buns.
- All beef hot dogs.
- Chips.
- Desired condiments.
Directions
- Grill or boil hot dogs.
- Add to bun and top with desired toppings.
- Serve with chips.
Grilled Cheese
Another meal that is simple to eat with limited need for silverware or plates.
Ingredients
- Sliced bread.
- American cheese.
- Butter.
- Chips.
Directions
- Pull butter out of cooler and allow it to warm up.
- Spread butter on sliced bread.
- Place bread butter side down in pan and top with a slice of cheese.
- Place another piece of bread, butter side up on top.
- Heat until golden brown, flipping occasionally.
- Serve with chips.
Barbecue Chicken
Chicken on the bone just feels right when you are out in the woods.
Ingredients
- Whole chicken separated.
- Salt and pepper.
- Barbecue sauce.
Directions
- Lightly season chicken with salt and pepper.
- Cook over a hot grill or campfire with grate.
- When done, 20-30 minutes, coat with barbecue sauce and serve.
